Summary

Phycocyanin is a vibrant blue pigment extracted from Spirulina, a type of cyanobacteria. Known for its strong antioxidant properties, phycocyanin helps protect cells from damage caused by free radicals. However, it has limited stability under high temperatures and acidic conditions. Phycocyanin encapsulated with natural polymer to enhance its stability in high temperature and acidic condition. Importantly, the encapsulation does not alter the natural characteristics of phycocyanin, as demonstrated by its maintained solubility and retaining the antioxidant capacity. Moreover, the purity of encapsulated phycocyanin meets the standards for food-grade quality.

This research is highly beneficial for the food industry, as encapsulated phycocyanin can be used as a functional ingredient or natural food coloring in various products. It can also be consumed directly as a dietary supplement or added to cosmetic formulations, providing a natural and effective ingredient for promoting health and wellness.

Product Impact

Meeting food-grade purity standards, this versatile ingredient is ideal for use in food products, dietary supplements, and cosmetics, offering superior health benefits and a neutral additive profile.

Product Uniqueness

The pectin encapsulation of phycocyanin improves the pigment's stability while retaining its natural solubility and antioxidant properties. The encapsulated phycocyanin is more stable in high temperature and acidic condition
